Spicy Scrambled Eggs with Asparagus & Adjika

Brunch just got a spicy upgrade! If you’re looking for a way to bring bold flavours to your weekend breakfast, this spicy scrambled eggs recipe is a must-try. Featuring Green Adjika and fresh asparagus, this dish is quick, healthy, and full of spring vibes.

Georgians love eggs with bold flavours, often pairing them with cheese, tomatoes, and herbs. This dish takes inspiration from Georgian breakfast favourites, adding a fiery twist with adjika’s aromatic heat.

Spicy Scrambled Eggs with Asparagus & Adjika

Ingredients:

  • 4 eggs

  • 1 tbsp Green Adjika

  • 1 tbsp butter

  • 2 tbsp milk

  • 1 bunch asparagus, chopped into bite-sized pieces

  • 1 tbsp olive oil

  • 2 tbsp crumbled feta or soft cheese

  • Fresh herbs (parsley or dill) for garnish

Instructions:

  1. Sauté the asparagus – Heat olive oil in a pan and cook the asparagus for 2–3 minutes until tender. Set aside.

  2. Whisk the eggs – In a bowl, beat the eggs, milk, and Green Adjika together.

  3. Cook the eggs – Melt butter in a pan, pour in the egg mixture, and gently stir over low heat until soft and creamy.

  4. Assemble the dish – Stir in the cooked asparagus, then sprinkle with feta cheese and fresh herbs.

This spring-inspired brunch dish brings together the freshness of seasonal asparagus with the spicy kick of Green Adjika. Perfect for a lazy weekend breakfast or a quick midweek meal, these scrambled eggs prove that adjika belongs in every kitchen—morning, noon, or night!
