This roast chicken is elevated with the savoury, spicy kick of Adjika Salt, and paired with roasted squash for a hearty, flavourful meal. It’s an easy yet impressive dish perfect for family dinners or cosy autumn gatherings.
Ingredients:
1 whole chicken
2 tablespoons Happy Adjika Adjika Salt
2 tablespoons olive oil
1 large butternut squash, peeled and cubed
3 garlic cloves, minced
1 tablespoon fresh thyme
1 lemon, halved
Fresh parsley for garnish
Instructions:
Prepare the Chicken: Preheat the oven to 180°C. Rub the whole chicken inside and out with olive oil, Adjika Salt, and minced garlic. Squeeze lemon juice over the chicken and place the lemon halves inside the cavity.
Roast the Chicken: Place the chicken in a roasting dish and surround it with cubed squash. Sprinkle thyme over the squash and season with salt and pepper. Roast for 1.5 to 2 hours, or until the chicken is golden and cooked through.
Serve: Let the chicken rest for 10 minutes before carving. Serve with the roasted squash and garnish with fresh parsley.
