Ingredients:

  • 3 large carrots, peeled and cut into sticks

  • 2 parsnips, peeled and cut into sticks

  • 2 sweet potatoes, cut into wedges

  • 2 tbsp Happy Adjika Scotch Bonnet Adjika

  • 2 tbsp olive oil

  • 1 tbsp honey

  • Fresh thyme and rosemary for garnish


Step-by-Step Guide:


  1. Preheat the Oven: Set your oven to 220°C.

  2. Prepare the Vegetables: Place the carrots, parsnips, and sweet potatoes in a large bowl. Add olive oil, honey, and Scotch Bonnet Adjika. Toss until the vegetables are evenly coated.

  3. Roast: Spread the vegetables in a single layer on a baking sheet. Roast for 25-30 minutes, turning halfway through, until they are caramelised and tender.

  4. Garnish and Serve: Remove from the oven, add a sprig of thyme and rosemary, and serve warm.
