3 large carrots, peeled and cut into sticks
2 parsnips, peeled and cut into sticks
2 sweet potatoes, cut into wedges

2 tbsp olive oil
1 tbsp honey
Fresh thyme and rosemary for garnish
Step-by-Step Guide:
Preheat the Oven: Set your oven to 220°C.
Prepare the Vegetables: Place the carrots, parsnips, and sweet potatoes in a large bowl. Add olive oil, honey, and Scotch Bonnet Adjika. Toss until the vegetables are evenly coated.
Roast: Spread the vegetables in a single layer on a baking sheet. Roast for 25-30 minutes, turning halfway through, until they are caramelised and tender.
