When it comes to Christmas dinner, the roast turkey is the star of the show. But this year, why not give it an unexpected twist with the bold flavours of our Red Adjika? This earthy and smoky condiment makes the perfect glaze for your festive bird, adding a unique, spicy-sweet depth to the traditional dish.
Ingredients:
1 whole medium turkey
4 tbsp Happy Adjika Red Adjika
3 tbsp honey
2 tbsp lemon juice
Adjika seasoning packet of your choice
3 tbsp olive oil
Fresh rosemary and thyme sprigs for garnish
Step-by-Step Guide:
Prepare the Turkey: Preheat your oven to 165°C. Clean the turkey, pat it dry with paper towels, and place it on a roasting rack in a large roasting pan.
Create the Glaze: In a bowl, mix together the Red Adjika, honey, lemon juice, and olive oil until you have a smooth glaze.
Season the Turkey: Generously season the turkey with adjika seasoning, making sure to cover all sides and the cavity.
Apply the Glaze: Brush the adjika glaze all over the turkey, ensuring it’s evenly coated. Reserve some of the glaze for basting later.
Roast the Turkey: Place the turkey in the oven and roast for approximately 3.5 to 4 hours, or until the internal temperature reaches 74°C in the thickest part of the thigh.
Baste: Halfway through cooking, baste the turkey with the reserved adjika glaze to keep the skin moist and flavourful.
Rest and Serve: Once done, remove the turkey from the oven and let it rest for 20-30 minutes before carving. Garnish with fresh rosemary and thyme sprigs for a festive touch.
